Hockenheim 2000, Rubens' first F1 win in such unbelievable circumstances. He started 18th on the grid, then lucked in when the rain started coming down in the later laps. A very emotional moment for him and the fans!
Sepang 2001, Schumacher showing everyone how to drive in the rain.
Australia 2003, everyong thought the Ferraris would dominate but half the field starting on wet tyres in intermdiate conditions, a non-stop order swap in the early laps, then Montoya taking the lead and spinning off to give David Coulthard his last ever Grand Prix win in the first race of the season.
Silverstone 2003, pure gold classic entertainment! More overtaking than the rest of the season put together.
Magny-Cours 2004, if only for the incredible statistic that accompanied it. Schumacher fighting through the field in not the best car, to beat Raikkonen in the dying laps and be crowned a seven-time World Champion in record time.
Interlagos 2006, Schumacher's last race, for the sheer value of "How the hell is he going that much faster than everyone else!?"
Interlagos 2008, the most dramatic title fight in history IMHO. Yes, even more so than Senna/Prost in '88. Last corner of the last lap!

There are undoubtedly some more classic races that I have forgotten, but these are the ones which leap to mind for me. If I had to pick a favourite out of all the favourites, it would be
Silverstone 2003. The whole race was just FUN to watch.
