For some reason ZM is being funny and not showing the full wireframe selected in the UV mapper screen :s Any ideas ?

I've had that before, it's almost as if the mapping object is going into the screen (which would make sense because of the curvature of the nose, but zm doesn't normally do that...)

try moving the mapping object in D/Z axis...

is it your mapping become a same delte on the map?

if you press assign with shift , if will do so

i had this sometimes too and i just did: reset uv and then again assign uv it helped me so hope you fix it ;)

The way I fix it is by assigning UV from another view. I'll try Nick's tip, never thought about it ;)
