is it posible to extract video and/or text files from game (gpmedia)

make videos of gp4 footage you mean? try fraps (fraps. com i thnk)
or with gpxpatch installed hold F11 down to take screenhshots and find a video editing tool to put em together

yes, there are in the following *bik files:
Mark_slow.bik, Mark_tour.bik, Mark_wet.bik, Mark_why.bik, Mark_pstop_detail.bik,Mark_pstop_overview.bik, Mark_qualify.bik, Mark_fast.bik,
which are in ...\Grand Prix 4\MenuData\PC\GP2001\Videos
with the RAD TOOLS u can watch it and extract.
