I have adjusted my helmet positions using tweaker however some of the helmets seem to sit too low and some too high, is one of the co-ordinates in gp tweaker related to changing heights and if so which one, if not is it possible to do this??

Y: for height. If you want it higher, put a positive number, or a negative bigger than before. Example: before -0.0250 after -0.0200 makes it higher.
Z: depth. Closer to wheel, or further. Example: before 0.000 after -0.050 is further apart from wheel.

The same works for steering wheels.

Use cameditor, it will be easier as you will see helmet positions graphically for each car and coordinates are in centimeters.
