If I want to start with a vanilla install and dip my toes into the modding waters, what would be a good starting point? Messing around with liveries?

The FAQ would be the best point to start from. There you get many tutorials that teach you how to do it. Liveries alone won't really satisfy you. So, shapes, along with liveries, and how to get them into the game, should be the first step.
